Born from a Simple Observation
Every Christmas season, we'd bake the traditional dark plum cake — the kind soaked in dark caramel, heavy spices, and dried fruits. People would pick it up out of tradition. But quietly, many of them would say the same thing: "I don't really like plum cake." Too dark. Too bitter. Too heavy. They bought it because it felt like the right thing to do for Christmas — not because they genuinely looked forward to eating it.
That observation sat with us. Plum cake season is one of the most special times of the year for a bakery. So we asked ourselves: what if we kept everything people love about a plum cake — the aroma, the occasion, the nuts, the fruit — but stripped away everything they don't? No dark caramel. No overpowering rum extract. No bitterness. A lighter base, the same warmth, the same celebration. Just made for everyone.
We quietly introduced the White Plum alongside our regular plum cake one season, expecting it to be a small side offering. It outsold the original within the first week. Customers who had never ordered plum cake from us before were calling back. Families started gifting it. People who grew up saying they hated plum cake were finishing it in a sitting. We knew then — this wasn't just a recipe. This was something we had to own.
The White Plum is now one of our most-requested products, not just during Christmas but through the year. It has become the cake that people point to when they talk about Bake Masters. We're proud of it — not because it's different, but because it proved that the best ideas come from actually listening to the people you bake for.
